Nourishing Noodle Bowls

I created this recipe a few years back to replace the Vietnamese Pho that my husband and I used to order in restaurants.  While the healing broth doesn’t incorporate all typical Pho ingredients, this bowl is super comforting and fairly quick to throw together while offering many healing benefits without the oil or MSG.

Nourishing Noodle Bowls

(Gluten-Free, soy-free, oil-free, fat-free, no msg)

Ingredients: 

  • 1 batch of the Medical Medium Healing Broth (See my previous blog post for recipe. Easiest to freeze and have ready to go for meals) 

  • 7-10 oz gluten-free glass sweet potato noodles or gf millet and brown rice ramen

  • 2-3 medium broccoli crowns, chopped 

  • 1/2 red or green cabbage, chopped

  • 8 oz mushrooms, chopped (I prefer shiitakes) 

  • 4 carrots, chopped and/or 2-3 cups sweet potato, diced and steamed


    Garnishes (all optional):

    • handful of fresh basil, chopped

    • handful of fresh cilantro, chopped 

    • lime wedges 

    • 3-4 green onions, chopped 

    • 1/4 white onion, sliced thin

    • pinch of red pepper flakes or sliced hot peppers 

    • a few dashes of coconut aminos or maple syrup

Directions: 

  1. Water sauté veggies in a large pan until soft and cooked through.  Steam sweet potatoes if using. Set aside. 

  2. Cook noodles according to package instructions and strain.  While noodles are cooking, reheat the healing broth.  

  3. Assemble bowls by adding noodles, veggies, 1-2 cups of healing broth and optional garnishes.  

  4. Enjoy this comforting, nourishing and healing noodle soup!  Serves 3-4.  

Tip: For more of a pho taste, I recommend adding a star anise pod to your healing broth during the last 15-20 minutes of simmering.
