Easy Fall Soup Recipe for Eye Health
When it comes to eye health, it really comes down to antioxidants. This creamy and delicious soup is easy to make and packed with eye-supporting antioxidants.
Red bell peppers are packed with antioxidants Vitamin A and beta carotene which support eye health, can improve vision and protect the eyes against cataracts.
Sweet potatoes are loaded with antioxidants like Vitamin C and beta carotene and are one of the most healing foods for eye health conditions.
Saffron contains several carotenoid compounds making it beneficial for eyesight and can specifically aid in the repair and prevention of cataracts. It’s also one of the most healing foods for eye health conditions.
Roasted Red pepper and sweet potato soup with saffron
(Gluten-Free, dairy-free, oil-free, fat-free)
Ingredients:
5 cups sweet potatoes, peeled and diced
3 red bell peppers, chopped
1 yellow onion, chopped
4-6 cloves garlic, left whole and skins off
3 cups veggie broth - I use Bonafide’s No Salt Added Broth
1 1/2 Tbsp tomato paste - I use Bionaturae
5-7 threads dried saffron - a little goes a long way!
1 tsp paprika
1 tsp salt + more to taste if needed
few grinds of pepper
Optional: a pinch or two of ground cayenne for some heat
Garnishes (optional):handful of chopped fresh parsley
chopped green onions
Directions:
Preheat oven to 425° F. Place all veggies and garlic in a parchment lined 9 x 13” baking dish. Roast for 30-40 minutes or until sweet potatoes are tender.
While veggies are roasting, soak dried saffron threads in warm water for 10 minutes. This helps activate and evenly distribute its flavor.
When veggies are done, place in a high speed blender with veggie broth, tomato paste and all spices including saffron. Blend until smooth.
Transfer soup to a large pot and simmer for about 10 minutes or until heated through.
Garnish with fresh parsley and green onions. Serves 3.
